My quest in life sometimes is to get the pierogies known everywhere and make them a little more. I mean, they're huge in the Midwest, huge in Cleveland and Pittsburgh, all throughout there, you see them a little bit in New York now. But it's such a delicious dish because it's starch on starch typically. It's a dumpling that then is filled with usually a potato mix or some kind of braised meats. It's a humble dish that I think you could elevate to really different levels.
