Pasta dishes I think are a dish that you should have every day. Probably you can do pasta every day. One of my favorites is carbonaro. Carbonaro is so simple. You can get all the ingredients pretty much in New York out of a bodega, you can get everything you need for a good carbonaro. Which is always good. Another one I really like is norcina. I do one of my restaurant called orecchiette alla norcina. And it's really just sausage rosemary garlic, and heavy cream, reduced little bit of parmesan. It's fantastic
