Welcome to this very special mid week episode of Mad Genius Live. My name is Justin Chapple. I'm a food and wine culinary director and your host Every Thursday morning at 11:00AM but as you could see it is Tuesday in the middle of the afternoon because we have a very special episode to celebrate this weeks finale of Top Chef Season 15, which is so crazy cuz I've been watching for 15 seasons now. And I have very special guests first and foremost Adrienne Cheatham. Welcome and we have Joe Flam. Thank you very much. Both who have risen to the challenge of competing this week Thursday for the season finale of Top Chef season 15. And one of things that I wanna put- Here we go. Yes, I mean kudos to both of you. And you've come a very long way, which is, Amazing. So first of all, you were eliminated. I was. Yes. And then you. Adrian thought she was done with me and then I came back from the crypt to give her a run for it. Only one Chicago winner. [LAUGH] And so what did it feel like kind of, did you ever think in last chance. Kitchen that you'd have the opportunity to kind of like take the whole thing? You know, it really didn't hit me until I went into the last one with brother and it was like, okay, next one who wins is back. And I was like whoa. Yeah. You know, that first challenge, being back and cooking with everybody and then, you know, when Chris went home, there was only four of us left. I was like, this is it, we're getting down to it. Like How do you make a rub? And then before you know it here you are, both of you. Before now we were literally standing on top of a mountain. So first of all, were gonna have a challenge today. We also will be doing the challenge today, that's going to be a ten minute challenge which I'll get to in one second. But First of all, I have to say this because I'm a huge fan of [UNKNOWN] classic in Aspen. I go, I think I've gone eight years now. And so what did it feel like, first of all being at the event, and what did it feel like cooking there in Aspen? Which if you're watching and you're not aware of this, they cook at 11,000 At an 11,000-foot elevation, right? It's pretty high up there. Yeah, I mean it was up there, you know? It was funny because we had come down from Telluride. Go to the Food and Wine Classic, for us, that's like going to the Super Bowl. It's like cooking on the 50-yard line at half-time. It was incredible. I mean, what a special place to have it. And to be cooking your own food, not cooking the food of someone we work for. Doing our own dishes. Presenting ourselves and our food was really great. I love that you brought that up cuz during the season of Top Chef you said that during the last few weeks or towards the end of the season you kinda found your voice as a cook and what does that mean to you? I mean, it means a lot. It means being comfortable with cooking the food that you want to cook, knowing that it deserves to be on the table along with any other type of cuisine, that it has value. It's delicious, it can be beautiful. I can be elevated, and it can be right up there with any other type of cuisine. Right, and you've kind of talked about the goal, or the You have a dream of kinda opening an elevated soul food restaurant. Yeah, doing regional southern. And I'm gonna be testing that out, starting a popup series called Sunday Best. So, I'm going to be playing with those dishes and those flavors and cooking my food up in Harlem. Awesome. All right, so I want to get started with the competition. This is gonna be about ten minutes, so I want to make sure we get through it. So we have come up with kind of like our own Top Chef style challenge for you guys to day. I've kind of filled in Adrian and Jill what this is and, so basically what we've done is we've assembled this Awesome selection here, if you will, of ingredients that go into a classic chef salad. Because we figured since we have two of the best chefs in the industry right now who are competing to be a top chef, we figured we would present to you this kind of classic Diner specialty. And have you transform it into something that- It's classic bocouse right here. There you go. [CROSSTALK] Okay, so, let's just, I want to show you guys these ingredients here. So, we obviously have lettuce. So there's a couple of varieties for you. We have some, a little bit of bread, which obviously, in a chef salad, might be the croutons. We have some tomatoes, some cucumbers. We have some sliced Swiss cheese, because why not? We have some bacon, and then of course, we have our deli meats. We have roast beef, we have roast turkey, we have baked ham. We have some avocados, a couple onions, and then we have hard boiled eggs. Okay, so the rules of this challenge. You have to pick five ingredients. From a classic chef salad and use them to create either an a muse or a starter. It can be anything you want. You could go in a very elevated direction or you can go just really fun and just make fun of it. Because we're not taking ourselves too seriously because You got a whole season of that on Top Chef. [LAUGH] Yeah, I think we got our fill. You got your fill of that. Yeah, the serious competitions are definitely over. I'm getting tense just thinking about a quick fire. There is and then we have like a random selection of ingredients back here that the chefs can choose from. And as we go along if they bring it then we're going to go ahead and they can pick from it. And then the last rule here is they have to use This is the secret ingredient. And you have to use ingredient, creamy french dressing. Yes! Awesome! [LAUGH] I told you it's gonna be a salt cream you get. Your own bottle of creamy french dresisng and Can I just take it home. You got take a home if you buy it's home-made. All right, so I'm gonna hit the timer, make sure you got your pans pre-heated here. Are you Ready? Are you guys ready? You're gonna have ten minutes. I'm gonna keep you posted on how much time you have. One more, [UNKNOWN]. [LAUGH] Are you ready? Yes. Okay, everyone cover your ears, cuz we're gonna go as soon as I blow this air horn. We got ten minutes on the clock. I'm gonna step away and I'm gonna let you guys do your thing. Ready? [SOUND]! [LAUGH] That was terrible. That was the loudest thing, not nice. What's up [UNKNOWN]? Say what you're making. All right, looks like Joe went right for the bacon. He saw that. You just throw tomatoes at me? [LAUGH] And it looks like Adrienne Going for a mandolin. She's got a mandolin now. This is a benriner. It's classic [UNKNOWN] Japanese mandolin here. Hey, you stealing my equipment there? And she went right for a perfect cucumber. That's not fair buddy. She's also going for the bacon. I'm glad we decided to leave it raw. Awwww. You know you're an experienced top chef contestant when you're able to open a beer for your fellow competitor, right? There we go, we got a nice, not so seasonal heirloom tomato that we gave Joe. [LAUGH] It's alright, I won't tell anybody. But he's going with it, you're going with it. I didn't know it was tomato season out there. It's feels like you know folks. It's definitely not tomato season here in New York. But okay, so Joe's got Persian cucumber. It's summer somewhere in the world. Adrien, we got our first protein pick today, ladies and gentlemen. Good going, what did you take? Bam. She got some roast turkey and ham. Can't have a chef's salad with only one. Joe is left with the rare roast beef. Let's see what he's going to do with that. Can he not take them if I use them? No he can thaw it, you can definitely take it. And don't forget, I'm keeping track of how many you're using. You have to use at least five of the ingredients from a classic chef salad, and then of course you have to use secret ingredient. Of course, [UNKNOWN] French. Lesos. The French? Dressing, ladies and gentlemen. Tressing my prevaunce. That one is a laruouse right? Yep I think it might have been a point. We cooked bacon in tem minutes here? Turn up your burner Joe turn up your burner. It's all the way up! I'm all the way up. I got to get mine up Jesus And so, side competition. This is for both of you. What is the main ingredient of French dressing? Ketchup. There you go. Is that [UNKNOWN]? Yeah, it's like a ketchup vinegarette, actually. Wow, Jesus. I went through this- I thought it was chili sauce. [UNKNOWN] where I made LIke classic. Not classic [LAUGH] but dressings that we ate as a kid for comida everyday? Uh-huh. Some French dressing's one of my favorites. Nice. It looks like Adrian finely diced some bacon. Not sure what she's gonna do with it yet. She's got some in the pan going. Yeah. How much time we got? We're down just about three minutes so you've got about seven minutes left I believe. [BLANK_AUDIO] Seven minutes left. Hear that going. Susan's pulling out the knife skills over here. Bacon's [UNKNOWN]. What's your feelings about throwing butter on bacon, Adrian? Nice slices of bacon, gotta Quick mince on that scallion over there. My gosh, you gotta get what Joe's doing over here, because he just put butter in the pan with is bacon. No. That's what we kept telling you, Adrianne. He's got bacon and butter in the pan. That's right. That just sounds like a whole lot of love. That's right. Why did you just add butter to the pan with bacon, Joe? Cuz it's delicious. Because the bacon's not quite as fatty as I wanted it. I wanna toast some stuff in there. So I give it a little more love. All right, it's official, the Food and Wine bacon is not fatty enough. [LAUGH] Sorry, I didn't mean to hurt you- Joe Flam. [LAUGH] Look at this, a little chiffonade of red leaf lettuce. [MUSIC] What else we got on over here? Hey, C, what you got? Got a little brown sugar bacon going in here. Got any herbs? It's got bacon, it looks like you put a lot of black pepper in there. Yeah, lets get a little spice in here. You're right, it's not very fatty, I had to add some oil. Told you [LAUGH] Told you. We've got six minutes left. One of the two Which one you gotta pick? Right. I definetly would have gone with the chef salad today. For sure. [MUSIC] Looking good, it definetly smells like bacon in here, well, that's plus. Nothing says loving like bacon. Like bacon in the who I kitchen. Yes. Do you have flash backs? Yeah. You're wait for Tom to walk into the Kitchen and just light us up. You can shave Justin's head and even look like Tom. [LAUGH] He's a little tall. Yeah. All right, if Tom is watching, Tom, apparently, you can shave my head, and I will look like you. A little, you know. After its all off, I'll throw up a picture of myself, and let's see if the audience agrees here. [BLANK_AUDIO] That is nicely toasted bread there. A little sourdough. Got four minutes on the clock. Four minutes. Little cheesy dough. Don't forget your French dressing. Thanks. [LAUGH] Man. I'll just tank this whole competition. You were gonna forget it? Never, who could ever forget French dressing? Don't forget the French. All right, Joe ha got a lot going on here. If I had to guess what he's making, he was doing some sort of Either lorrine or sandwich and what I forgot to mention is I will be the judge today. Well nice Jeff thanks for letting us know buddy. Ya we'll call you Tom. This is because were in New York city and the app that we have I think were at a much more pleasant palatable. elevation for cooking. Look at this. Check out what Adrian is doing. She's going fancy on us. Not at all. She's the fanciest, man. That looks so awesome. Like a naruto roll. If you give me ten minutes and you want an amuser or starter I'm going to give you something and make it look nice There you go, that's all we ask. The least I could do, Justin. We got three minutes on the clock. Three minutes- My gosh, I don't even know if they're gonna need it all. I don't know, Padma and Tom trained us pretty well. Yeah. [LAUGH] [UNKNOWN] good. I'm like, I can't even remember how many episodes is in this season. It's something like 20 26 episodes. 13 wow. 14. >. 14 okay. [UNKNOWN] [BLANK_AUDIO] You had 14 chances [BLANK_AUDIO] To pick up the skills you need for this chef's salad competition. [LAUGH] I feel like we've been training for the chef's salad app dish all our lives. All right Joe is first of our two competitors to use the secret ingredient. The french dressing. The creamy, homemade french dressing. Which as you know the main ingredient is ketchup. Ketchup vinaigrette, baby. We've got two minutes left. Two minutes, heard. And Joe seems to be very happy with his French dressing concoction that he's got over here. [NOISE] Are you cooking French dressing? Heating it. And Adrian is cooking her French dressing. We've got two- My God. It's breaking. That's so good. Nobody's gonna know. It look's delicious. Actually, they both look really delicious. I hope folks at home are watching this, get a little weeknight dinner inspiration, or not. [LAUGH] Weeknight [UNKNOWN] inspiration here. You know, Joe is topping his open faced sandwich with his french dressing, what is in your french dressing? You've got the french dressing. The french dressing, bacon, and a little bit of scallions from my onion [UNKNOWN]. Do I have five things? One, two, three, four, five, six. I got six, I got all sorts of things. You're crushing it, dude. You're overachieving now. We've got a minute left on the clock, I knew that we should have went with ten, Excuse me, Adrian. [LAUGH] She's ready to go. [LAUGH] See, you took a sip of your beer before, she took a sip of beer after she did her work. [LAUGH] Yeah, well that's the difference between us, I guess. [LAUGH] You've got 45 seconds. I know how to prioritize. And I don't think Adrienne or Joe. I don't think either one of them actually need the last 30 seconds here, right? Look at this. Comradery in the kitchen. All right. All right, so we challenged Adrian and Joe to compete in making either an amuse or some sort of starter using some of the ingredients that you would find in a classic chef salad. Because we figured if we're gonna have two top chef finalists in the Food & Wine Test Kitchen in New York, then we were going to have them go with something really classic. Alright, so, Adrian, we're going to first talk about your dish. I'm going to move it right out here in front so the camera can get a really nice shot of it here. Right. Ok, so what are the five ingredients from a classic chef salad that you incorporate into your dish. Well, it's good to count now because I didn't before [LAUGH] We have the cucumber. Turkey. We also have hard boiled egg and tomato, ham, bacon, and your French dressing. My god, all right, we got seven. She's got it all. And she pulled out, okay, so I think you have to give it a name. What do you call it? Let's call it a chef salad roulade. There we go. Let's call it a pinwheel. A chef salad pinwheel, okay. And cucumber. I mean, it looks actually Very stunning. [CROSSTALK] Cuz I'm getting married in a week, so I gave up grains. You're getting married in a week? Yes. My gosh. Well, congratulations. Thank you. Will this be served at your wedding? No. No. [LAUGH] Before I taste it, we're gonna move over and we're gonna talk about what Joe has over here. Okay, so, Joe, I'm gonna pull it out in front so the camera here gets a nice close up shot of it. Tell us what Because I told you to use five ingredients. Obviously Adrian pulled out all the stops and she used at least seven. What are the five ingredients from a classic chef salad that you used here? So I used the bread, the Swiss cheese, the cucumber, tomato, roast beef, lettuce, onions French dressing and bacon. There we go. Nice, I did use scallion. She did use scallion. She didn't say that the first time. Doesn't count. I think it's probably pretty even with the total number of ingredients that were used. Fancy toast? He did a fancy toast. I'm gonna be the judge of this but it's way too big to eat. So I'm gonna Ask you to cut it for me while I try. I'd be happy to. I think we should all try. Can we try it together actually? Yeah, please. Okay. Let's do that. Ladies first. Let me just clean my board a little bit. [LAUGH] She's like, I don't want it on camera what- Yeah, look at that. My work surface looks like. [LAUGH] Yeah, I know, right? All right. All right. How are we doing here? Go for it. That's pretty damn good. That is really good, actually. It's simple,light. It's simple, it's light. That homemade Stretching that a long way with that bacon. Yeah. It's like if Panera had a catering company and did past apps. [LAUGH] That's what it taste like. All of that in a roll. I mean that as a compliment. [LAUGH] All right. Let's all taje one of these guys over here. Okay. Eat that bread. Nooo. I'm hurting your wedge shred right now. You are. Lo siento. What dress? [BLANK_AUDIO] This is hard. I have like five paper towels I'm using to wipe my mouth. All right, this is really tough. That's nice and Dressed and seasoned and fatty. So your roast beef, BLT. Fatty but you [UNKNOWN] a. Mm-hm. I like that creamy French dressing. It's like a BLT accoutrement. That's nice. Mm-hm. I'm thinking here because I'm actually really struggling with this. Okay, so I'm gonna judge this on two things. Overall taste, And fun factor. I think I'm going to have to go with Adrian's. Wow. [LAUGH] I love you. Because I feel like. I'm going to break this down and I'm going to give it my best attempt at being a Top Chef judge. So, I think you both played very well to the sweet and savory. Combo of the dressing. The dressing is very sweet. It has ketchup, it has sugar, a little bit of vinegar. But you both knew that, and you went for the bacon, both of you. So I think that that's actually a chef skill of balancing that sweetness and hitting it with the smoky bacon. I think that Because what is bringing up both of your dishes together is the combo of the bacon and the dressing, [BLANK_AUDIO] The reason I had to go with Adrian's is because it was all about the fun factor I think here, because they were both super delicious. How can you not win when you make- That's pretty- I'm just more fun. How could you not win when you make a pinwheel? That's pretty fun, pretty fun. Yeah, it's borderline cheating. I think it was fun. It's borderline cheating, making pinwheels. And whenver you pull out The metal skewers. Yeah. The metal toothpicks. I think you win. Alright. This is awesome. Thank you both for competing.
