F&W executive wine editor Ray Isle explains how glassware affects the taste of wine.
Here's the deal, you can drink wine out of a plastic cup. It will carry the wine into your mouth and you will drink the wine. But you know what? Why? Why if you have good wine would you do that to yourself. What does a wine glass do to the flavor of wine, and why does it matter if you have one glass or another glass. I'm here to tell you, here are two totally basic kinds of wine glasses. Red wine glass, white wine glass. What's the first thing you notice? The glass is curved like this, it goes up and it goes in. There's a key reason for that, what it does is it concentrates the aromas of the wine. So when you pick up the wine and you smell it, what that glass shape does is it makes the aromatics of the wine more intense. When you intensify the aroma, you're intensifying flavor at the same time. Why are white wine glasses smaller? Basically, they keep wine colder. Smaller portions stay colder longer. White wine is typically served cool. Red wines tend to be more robust and you tend to serve them closer to room temperature. You can pour a little larger, it doesn't matter if they warm up. Champagne The flute, this is the classic champagne glass. There's a real, straightforward reason why people use flutes for champagne, and that's cuz you can see the bubbles rising up in the flute, and it's really beautiful. Then, stemless glasses, are they good? Are they bad? Are they convenient? Absolutely. What's the problem with stemless glasses? Your hands. They're great for casual events but keep in mind the fact that you hold the glass this way means your hands is always in contact with the glass. It's gonna warm up the wine and eventually your is gonna be 98.6 degrees which is the temperature of your body, which is a gross temperature for drinking wine. Finally, you why there are stems on glasses? Cuz you can have these little thing down here. And what is that? It basically a coaster. You do not need coasters when you a wine glass with a stem.
