F&W Test Kitchen whiz Justin Chapple demos how brown sugar can be used to mold chocolate.
I'm Justin Chapple from Food and Wine's test kitchen. Join me as I demonstrate mad genius tips. Homemade chocolate. Chocolates and homemade candies are amazing for special occasions. The problem is you need either chocolate molds or candy molds. But I have a mad genius tip for using brown sugar to mold chocolate. So, you're going to spread an even layer of brown sugar all over the baking sheet. And once you have it in a nice even layer, don't worry we're not going to waste it. We're going to cover it with plastic so we can reuse it later. Now comes the fun part. We get to actually make the molds. So I'm using ordinary kitchen items. I'm gonna start with a teaspoon. Just press it into the brown sugar to create an oval shape. Now I'm going to use a prep bowl to create a round mold. And because I like variation, I'm going to use the bottom of a salt shaker to create a square. I'll continue to do that until I make enough molds to fill the tray. Now, I have a bowl of melted chocolate. And we're going to just spoon it right into the molds that we've created. Look how cool that is. [MUSIC] And I like to make them extra special so I'm adding some flaky sea salt on top and some silver pearls. Perfect. [MUSIC] Look at these beautiful chocolates. They look good enough to eat, but we're going to let them cool and harden first. So it's been about an hour and a half, and my chocolates are set, and now we get to take them out. So I'm using a small spatula, and you just pop it right off of the plastic. [MUSIC] Look at these chocolates, they make perfect gifts. [MUSIC] Especially for my mouth. [BLANK_AUDIO]
