[MUSIC] I'm Justin Chapple from Food & Wine's Test Kitchen. Join me as a demonstrate Mad Genius Tips. So you have this beautiful fish filet. It could be red snapper. It could be sea bass. And you want to add a ton of flavor to it. Well, one way to do that is to score the fish, and all you need is a knife and an everyday baking dish, like this one here. What you're gonna do is take your beautiful fish filet and you're going to set it on the side of your baking dish just like this. By doing this You're pulling the skin, and because it's nice and tight, it's going to be so much easier to make a super shallow cut, which is what we're looking for. Take your paring knife, very easily and in one motion, we're just going to make some nice shallow cuts. Just like that, we've scored our fish fillet. Can now add things like herbs or spices. I happen to be partial to herb rubs. Spoon a little on top and then you rub it, nice and gently into the little cuts that you made and now whether you grill it or bake it ,it's gonna add tons of flavor. [MUSIC] [BLANK_AUDIO]
