Bacon fat is the key to a Mad Genius taco experience.
Just like many of you at home here in the Food and Wine Test Kitchen we save all of our rendered bacon fat. So it's a good thing that my Andrew Zimmern is here because he's teaching me an excellent new way of using it. And it's Mad Genius. [MUSIC] The nice thing about this, I'm just gonna add some salt. And some of my baking powder while we're talking, is that you can do this with bacon fat. You can do it with chicken fat if you collect it from all your roast chickens. I like to use about half a cup. [MUSIC] That's about right. [LAUGH] Well, who wants to wash that when- That's a mad genius way of measuring. During just incorporate your bacon fat or your other lard into the flour that surrounds it and then start to work in the rest of your flour. Add your scallions and then water. [MUSIC] And do not make the mistake of adding more water too soon. You're gonna work this with your hands for two or three minutes. And squeeze that together. You're not far off from dough. Right? So some people freak out and go, I need a lot more. You don't. And you can feel how tender it is already just- Yeah. Because of the Baking fat. And this is the point in time that I actually will roll what I call my football. [LAUGH] [MUSIC] And as these rest, right? The liquid in there and the protein, all that wonderful sort of baking techno stuff that all the baking nerds talk about That happens. I do have a mad genius tip for this, though. Don't wash in hot water. Wash your hands in cold water, it comes right off. Hot water activates the glutens in the flour and it will actually get stickier [MUSIC] All right, it's been 20 minutes, Andrew. Mm-hm. What are you gonna show me here? Well, if you set one of our tortillas out there. A well floured work surface. You wanna center this and stroke one way. You don't wanna make these. Too crazy thin. Put a little bit of that bacon fat or oil in there, give a quick wipe. There we go. Look at that. But see the bubbling here? That's what you wanna see and then you flip it. Touchdown. I like to serve These with crispy fried chicken skin and make little fried chicken skin tacos. This bacon fat scallion tortilla is mad genius. [MUSIC]
