F&W's Justin Chapple reveals how a cheesecloth can help keeping your turkey juicy.
[MUSIC] I'm Justin Chapple from Food and Wine's test kitchen. Join me as I demonstrate mad genius tips. [MUSIC] The biggest fear when cooking a turkey is that it's gonna be flavorless and dry. I have a mad genius tip for a flavorful and juicy turkey. First, I'm gonna show you how to make your seasoning. What we're gonna do is melt some butter. And to that I'm going to add apple juice, some thyme sprigs and some lemon peel. These are just the flavors I'm chosing, feel free to experiment. And now the secret to these genius tip, is cheese cloth. You just need a piece that is large enough to cover the top of the bird, and what we're gonna do is soak this in some water You're gonna wring out all the excess water. Next we're going to take that beautiful seasoning we made and we're gonna put it into a large bowl. Don't throw these away because these are delicious too. You can throw them all around the bird. Now the fun part. We're gonna take that cheesecloth, gonna drop it in there, squish it around. You see all that? That's butter, that's apple juice, that's flavor. Now you're gonna lay it right on top of the bird. It's a shawl, a turkey shawl. And guess what when it's roasting in the oven I don't even have to touch it. No basting nothing. All that juice and all that butter's gonna seep down into the turkey. It's gonna flavor it and it's gonna naturally bast it. Okay let's pop this baby into the over. Look at this incredible bird I'm telling you this is one of the most gorgeous birds I've ever made. Because I've got these cheese cloths on top. Look at it. You could see the turkey is golden, the skin is nice and crisp. This is exactly what we want. One. [MUSIC] [BLANK_AUDIO]
