In a restaurant world and in the delicious world of home cooking, the best way to understand how to really give something a great char is to cook it on the first side down for 75% of the cooking time and then turn it over. What that will give you is that magnificent kind of outer crust that wouldn't happen if you turned it over and moved it too often. In that same sense, don't move it very quickly, right when it puts on. Allow it to sit there until you think it's almost over the edge. And then turn it that first time.
