Hi, my name's Kevin Spraga and I am the winner of Top Chef season seven. Today I'm making Lindsor cookies. Traditionally there's a dessert called Lindsor tart, my version is a cookie though. Today we have hazelnuts and red flour. In the bowl we have a little bit of sugar, butter, and eggs. We're gonna season the cookies with a little bit of clove and cinnamon. I'm gonna turn the mixer on and slowly start to incorporate my dry ingredients. We're using raw hazelnuts rather than toasted hazelnuts. I'm gonna stop them about halfway through and scrape my bowl down. To make sure nothing is stuck on the bottom. Go ahead and finish that up. We're just gonna divide this batter. And now we're gonna let this dough rest. There's a little bit of flour on there as you'll see, and I'm just gonna roll it out a little bit thinner I'm going to go to about a quarter of an inch. At this point, I'm going to begin to cut the cookies. We're going to try and cut it very close together so that way we get the most yield out of it. Now the fun thing to do with the little centers is bake them up. I like to give them to my children to eat. So we've baked off these beautiful linzer cookies. So I'm gonna begin to fill the cookies. I'm gonna spread a little bit of this jam on top. The raspberry jam has a beautiful star anise and coriander flavor, which is very unique to this cookie. Next, I have a little bit of powdered sugar right here, and we're gonna sprinkle that right on top. I'm gonna tap it against the palm of my hand, just like that. [BLANK_AUDIO] I'm gonna put the tops right on. I'm also gonna press it down just a little bit. And these are my linzer cookies.
