I'd like to introduce you to your guest judge for this round. He is chef and celebrated restaurateur, Mr. Charlie Palmer. [APPLAUSE] Thank you, chefs. Charlie is the pioneer of American cooking and paved the way for young American chefs get recognized in the world As chefs, not just cooks. Brian and Michael, both have worked with me in the past, but I can assure you that I will be totally impartial. Charlie Pomero is my biggest influence, he was the one who gave me a first start in New York as an intern coming out of CIA. He saw a lot of promise Seeing that so hot. I mean the last thing that I want to do is to let in them [UNKNOWN], I'm thinking steak onions. Onion flavor is a part of the dish and it pairs with the savory onion strips. Charlie makes [UNKNOWN], Charlie is very [UNKNOWN]. I was Charlie's executive chef for over a year. But I've worked with Charlie pretty much exclusively until Brian went off on his own. I'd say that if Charlie had to pick between Brian and I, he would certainly go with my brother. >Michael seems to think that Charlie doesn't like him, but I think it's complete bull*beep*. I think it's funny. >A little nervous. More than a little nervous.
