[MUSIC] Cactus is a wonderful ingredient. Most people really don't mess around with cactus cuz, you know what, it hurts. So I've got a little advice for you. Be careful. [LAUGH] I have never worked with cactus. In the Basque country there is absolutely no cactus. I wasn't even sure you can actually eat [UNKNOWN]. For your quick fire challenge, you have 45 minutes to make something succulent with these succulents. People think if you blanch it it takes the goo out. People say if you grill it, it takes the ooze out, but it doesn't so the key is you want to cure it like you would cure salmon. When you submerged your salmon in salt it pulls all the liquid out so that's the same mentality I'm going got take with this cactus. I not going to cook it I'm going to serve it raw.
