[MUSIC] Confident with this one? Ten or 11 years ago, I did some culinary competitions and I always did well, so. I chose salmon because it takes a little more finesse to perfectly cook 12 portions and serve it. So it's a little bit more of a challenge to go with that, I think. [MUSIC] You son of a ****. When I'm cooking Atlantic Salmon unilaterally so it's going to cook very slowly from the bottom up. It's pretty risky because the top can still be cold and raw instead of, you know, warm and rare. Hey look. deaf and dumb. Cooking for Thomas Keller is. It's nerve racking. I mean, he is just a genius. And this is a huge, huge, huge opportunity for him to see my talents. But it's just, [LAUGH], it's a little stressful. I know I'm pushing the envelope on this one. And my biggest concern is the braise, getting the braise done within the four hours. Preparation typically takes about ten hours to do, but I'm confident, and I hope that doesn't get me in the end. [MUSIC] I chose the [UNKNOWN] in this challenge because it's a more appropriate way of cooking what I wanna cook. It is odd that it turns out That it's the last competition I'm gonna have. And that it's probably one of the edgiest ones for me to try and do something that I never do. I hope that I can take the appropriate technique for the end result that I'm looking for.
