ChefSteps reveals a quick, easy way to shuck a bunch of oysters.
[MUSIC] Normally if you wanna shuck a ton of oysters for serving a lot of people or oysters in the half shell, or you're shucking them in advance to grill them it's really difficult. YOu have to them individually and it's super boring work. We have a trick that makes it so much easier to shuck it a bunch of oysters. Shuck it a bunch [LAUGH] Okay. This is a great trick to make shucking them really, really easy. And they actually turn out more beautiful too. What we do is we take a pot of water, bring it to a boil, dump all of our oysters in for about 30 to 45 seconds, depending on the size of the oyster. Plunge them. After about 30 to 45 seconds, you take all those oysters, dump them in ice water. And they can hang out in the ice water for as long as you want. When you're ready to shuck them, they almost shuck themselves. Shuck themselves. Shucking these oysters is super straightforward. The boiling water softens the oyster's adductor muscle, which is what keeps the shell closed. What you'll find is they're really easy to open or their top's open already. And since they're a little blanched, they're tightened up a little bit so they look more beautiful too. They kind of turn into these beautiful little gems that way. Look at that.
