I was cooking in Colorado and I really wanted to come back to Austin and be a part of the whole local food movement that was going on. So kind of what popped into my head was to start doing a food trailer which is so popular in Austin. I looked around trying to find this old trailer that I could fix up and do what I wanted with it. We put a wood grill in there that we cook everything on. And the whole concept was, you know, farm to trailer. I really support local farms. I wanted to develop relationships with the farmers. And the whole goal was to get a restaurant someday. And, you know, eight months later, I signed the lease for Barley Swine, and here I am.
