When you're trying to go with fish the thing you wanna think about is like oil content versus water content. Oil content of the fish is gonna make it easier to grill because it's gonna kind of baste itself a little bit. It's not gonna fall apart. If you're talking about fish like snapper, you're talking about fish like flounder, don't really work too well with the grill. High water content makes it stick on the surface of the grill. So things like amberjack, things like salmon, things that have a high oil content are better for grilling.
