If i were making a chicken with a little more subtle preparation like a cream sauce a wine that I would be looking for is something that would really emphasize the richness. When you say cream say you're really talking about a butteriness and then California Full-bodied buttery Chardonnays really echo that flavor and elongate it, and it makes for a very sort of sensuous and hedonistic experience. If you want to do a red wine with that, again, I think what you want to do is take a wine that has some suppleness. Pinot Noir will not overshoot that dish and would allow that richness to still come through without making it feel heavy.
