Use this simple method to achieve perfectly tender asparagus.
[MUSIC] Bonjour, welcome. Today I'm going to do an asparagus soup, with an emulsion of eggs and parmesan. We have a lot of beautiful asparagus, look guys, beautiful, beauty. Just one thing guys, I'm going to give you advice, when you go to a restaurant and you are dating somebody, make sure you don't eat asparagus. You eat asparagus, your pee smells. Weird flavor. First we are going to blanche our asparagus. Mix our asparagus with water. That's it. I just want the flavor of the asparagus. Put in the ice water. And when you put the tips also in ice water. Just ice and water. I'm gonna put them in the fridge. The secret in the kitchen I learned a long time ago, any green vegetable, put your green vegetables in the ice bath, then boil the water and pour your vegetables. When the vegetables are cooked, Ice bath again why? To really shock the asparagus we're going to put them in hot water and we are going to fix the color of the asparagus. It's very scientific but we're keeping the chlorophyl definitely. [MUSIC] Now we're going to cook our asparagus in boiling water. I'll put a touch of salt, so now we're going to take Or a piece of asparagus. Strain them very well. And be careful, okay? Don't just drop the asparagus like this. You are going to burn yourself. [UNKNOWN] So now we're going to the asparagus until the asparagus are tender for a good 5 minutes. Voila. Induction is the best for that, and induction really, really keeps the heat and the bubbling, you know? It's so powerful, induction, and so fast to cook. When I eat a lot of asparagus, my pee smells. Noooo. Our aspargus is cooked. So, now we going to put aspargus in ice water, boom. So now we're going to chill the aspargus for good five minutes. [UNKNOWN] There's nothing wrong to pee next to your friend. [MUSIC] So this process, you can do that with green beans, with peas, with green vegetables, edamame. You eat a lot of sushi? Boom, okay. I have a mixer called Thermomix. So this mixer will do a lot of things, like a little computer. But this mixer also add heat, you know I can cook with this thing. Heating, it can do a soup inside. You can do sauce in the mixer because it heat. You do everything. I'm going to put a little bit of Throw this in, it's always better to put less than too much, if you put too much, nothing you can do. Traditional white pepper, I'm gonna add a little bit of water. Top, okay ready guys, here we go, let's go take off. [SOUND] Beautiful, quite texture, put a nice pat of soup here, Okay so now guys I'm going to show you a little trick to do a quick hollandaise With no stress. Hollandaise is an emulsion of eggs, wheat lemon, and also with clarified butter. But it's very, very, very difficult to do. So I'm gonna put all of my ingredients of my hollandaise here and cook it. 10 eggs here. [MUSIC] [MUSIC] Voila. Now we're going to add unsalted butter, grated parmesan. [MUSIC] Little touch of salt cuz keep in mind the parmesan is very salty. So now I'm going to set my computer so we go at five minutes, 140 farenheit. Mix. [SOUND] [Blender] For five minutes and we are good. [SOUND] [ringing] That looks great, put a little bit of cream now to start the process. Now put lemon juice, we mix one more time guys and we good. So now we going to heat slowly as prepare the soup, very gentle. It just asparagus, water and salt, white pepper, that's it. So it really, really taste asparagus. Voila, one soup on the plate. Okay, put some few asparagus tips. Here's some texture to your soup. And now I'm going to put a nice spoon of our eggs, parmesan custard. [MUSIC] Voila, Green Asparagus Soup with parmesan custard.
