My goto thing are frittatas. I clean out the refrigerator. I carmelize the potatoes beforehand, pull them out so they don't stick on the bottom. And I do big 18, 20 egg frittatas. The favorite in our house is leek and mushroom with goat cheese. It's a classic. And thin slices of yellow finger length potatoes.
