At Restaurant Kelly Liken in Vail, Colorado, chef Kelly Liken’s signature dish is her potato-crusted trout fillet. Liken came up with the dish long before the restaurant opened. “It was a way to honor my grandfather,” she says. “He taught me how to fish, and used to cook trout for breakfast with fried potatoes and eggs. When the dish became so popular, that meant a lot to me.”
