When most people think of avocado, they think guacamole, avocado toast and a salad topper. I, on the other hand, have different plans for my avocados this summer. Yes, there will be chunky, cilantro-laced guacs at my barbecues, and avocado toasts on crunchy, seedy bread for breakfast, but avocadoes will also be my summer grilling secret weapon.

Most people think warm avocado is gross, and I agree. The sweet, creamy flesh turns even softer and oily, and it's just weird. I would never put avocado on a sandwich I plan on panini-ing, or on my nachos before they go in the oven. That said, I will absolutely put my avocado on the grill.

Sound scary? I guarantee you an avocado on the grill is something everyone should try. Think about those satisfying grill marks and the flavor a gas or charcoal grill infuses...and now think about it on an avocado. And consider this: grilling an avocado is super easy, even though it might seem a little tricky due to the soft flesh of the fruit (yes, it is technically a single-seeded berry!), but once you get the hang of it, it is an easy skill to master.

Simply cut the ‘cado in half like you always do, and take the pit out of the half it decides to stick to. Then, brush the cut side with olive oil and season it with salt and pepper. Meanwhile, heat up your grill to medium-high. You want it hot enough to create grill marks, but not so hot that it will melt the avocado.

Put your avocado halves cut-side down on the grill, and leave them there for 2 to 3 minutes. If you move them, your grill lines will be imperfect and some of the top layer of flesh will stick to the grill. Check one half for defined grill marks, and if it has the trademark black burnished lines, pull all the halves off the grill.

Once you have your grilled avocado, you have to decide what to do with it! My favorite way to enjoy it is topped with pico de gallo—a mixture of chopped tomatoes, onion and jalapeño peppers. You can either buy it premade or make your own, they are equally delicious.

You can also use your grilled avocado for your quintessential guacamole or avocado toast. Let the grilled halves come to room temperature, and then make either dish as you would normally! The burnt grill marks and smoky flavor add a secret something to both dishes that livens up the classic recipes.

If you want to get a little fancy with your grilled avocado, try seasoning it with different spices before putting it on the grill. Adding Aleppo-style pepper or red chili flakes will bring the heat, and cumin will add a Latin-American spin to the technique.
