Cocktail historians credit this classic summer gin drink to John Collins, a waiter at Limmer’s Old House in 1800s London. The “Tom” part came along when bartenders began making it with Old Tom gin, which is slightly sweet. How to Make It


Fill a chilled collins glass with ice. Add the gin, lemon juice and simple syrup and stir well. Stir in the club soda and garnish with the lemon twist.
