Tahina

This toasty, rich sauce from Maydān restaurant comes together quickly in a blender. Use it on salads, vegetables, and chicken, or to top Slow-Grilled Cauliflower with Tahina and Zhough.

Ingredients

  • ¾ cup water

  • ½ cup tahini

  • 6 tablespoons fresh lemon juice

  • ¼ cup grapeseed oil

  • 3 garlic cloves

  • 1 teaspoon kosher salt

Directions

  1. Combine all ingredients in a blender, and process on high speed until completely smooth, about 1 minute. Refrigerate in an airtight container up to 5 days.
