I made this for the folks my husband and I play cards with on Saturday evenings. It was a huge hit. I left out the tomatoes, but added fresh string beans. I also had a little French's Onion Rings that I crushed and mixed with the Parmesian cheese. I baked it at 400° for 40 mintues, then after adding cheese, I baked at 425° for 20 more minutes to get the crisp factor on top. Everyone went back for seconds, glad I made 2!
Abruzzi vegetable casserole recipe I found in the 80's I think in Bon Appetit had about 10 vegetable in the casserole with some being chopped fine. I cannot find the recipe anymore and wondered of anyone else was familiar with it?
