Sambal oelek garlic-chile sauce—long a staple of Asian groceries and specialty stores—is now available in many supermarkets. Combined with a little sesame oil, the spicy sauce turns a broccoli sauté into a standout side dish.

2 tablespoons unsalted butter
1 shallot, chopped
2 garlic cloves, thinly sliced
Freshly ground black pepper
1 pound broccoli, thick stems peeled, cut into flowerets
1 cup water
1 tablespoon sambal oelek
2 teaspoons Asian sesame oil
How to Make It
In a large heavy skillet, heat the butter over medium high heat, then stir in the shallot, garlic, 3/4 teaspoon of salt and 1/2 teaspoon of pepper. Cook, stirring occasionally, until the shallot and garlic are golden, about 5 minutes. Stir in the broccoli, water and sambal oelek and cook, covered, until the broccoli is crisp-tender and the water is evaporated, 10 to 12 minutes. Drizzle with the sesame oil, season with salt and pepper to taste and serve.
