After my first time making this recipe, I found myself craving it on a regular basis. Delicious! The recipe for leftovers served in tacos is also good, but I do a shortcut version where onto a toasted tortilla I toss: sliced pork, avocado, red onion, tomato, cilantro, a slice of half-sour pickle (no kidding… it’s an amazing combo!) and a squirt of lime. And now the craving is back… heading to the kitchen!
You should never roast meat without pan searing it first. Without the pan sear you get a rough dry texture with each bite. The cumin ruins this dish - cumin should never be used in rubs!!!!! I was skeptical but F&W recipes are usually ok so I stuck with it. Wrong! I would not recommend making this dish.
This my go to recipe for charcoal grilled pork tenderloin. The tenderloin get a beautiful and tasty char from the charcoal and the spice rub really add a lot of flavor to the pork. I have used this recipe dozens of times.
