Used double-thick chops from a rack of lamb which I cooked sous vide at 130-F for 2 hours and proceeded with the remainder of the recipe (without cooking the lamb further in an oven, of course). A wonderful, richly flavored sauce is created by the combination of wine, coffee and tomato paste while the underlying spices provide additional interest.
