There is literally nothing Texan about this recipe at all. We do not cook brisket in slow cookers (or ovens) - we cook them in smokers. We would also not use "cajun" seasoning; Texans season brisket with kosher salt and black pepper, 1:1.
As it is, this will result in bland brisket with what little flavor present coming from the beans.
