I’ve made this several times now, and it is always a hit. I haven’t deviated from the recipe yet, but I am making it for guests tonight, and think I will add cheddar cheese to the mashed potatoes. Not a radical addition, but I’m comfortable enough now with the basic recipe that I can start riffing on it. One trivial point, however: the recipe calls for the lamb to be drained through a colander into a large enough bowl to catch the drippings. I thought at first it was for further use, but it’s never mentioned again. An odd instruction on how to drain browned meat!
The problem is that you are allowed to rate it without commenting. I hate that.
Fantastic, however I like to put a little oregano and a dash of rosemary in.
