This fast and fresh yellow squash takes just 10 minutes, and makes a great side or light summer supper.

1 tablespoon extra-virgin olive oil
2 medium yellow squash, sliced crosswise 1/4-inch thick
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh thyme
How to Make It
In a large skillet, heat the oil over moderately high heat. Add the squash and sauté until browned and tender, about five minutes. Remove from heat and season with herbs, salt and pepper. Serve immediately.
