This slightly spicy roasted yellow squash takes just 20 minutes.

1 tablespoon extra-virgin olive oil
2 medium yellow squash, sliced crosswise 1/4-inch thick
2 cloves garlic, thinly sliced
1 teaspoon crushed red pepper
How to Make It
Preheat oven to 450º. In a large bowl, toss the squash, olive oil, garlic, red pepper flakes, salt and pepper. Arrange in a single layer on a baking sheet and roast until browned and tender, about 15 minutes. Remove from the oven and serve.
