2 pounds mixed chopped mushrooms (such as maitake, stemmed shiitake, oyster and cremini)
1/2 cup extra-virgin olive oil
Fresh lemon juice
How to Make It
Preheat the oven to 450°. In a large bowl, toss the mushrooms with the olive oil and season with salt. Spread on 2 large rimmed baking sheets and roast for about 30 minutes, stirring once, until golden.
Season with fresh lemon juice and serve.
The roasted mushrooms can be refrigerated overnight. Gently reheat before serving.
