I've made this so many times because it is always good. Such a simple recipe and great results. I've added about a pound of mushroom (any kind) to the pan after the 1 hour mark before I increase the temperature (my chickens are about 3 pounds, since the bird is so small I can only put 1 lemon inside) and it's a big hit. For dinner parties, I roast 2 chickens and 2 pounds of mushroom. Everyone raves. Thank you for this recipe.
