Red Pepper and Onion Tarts with Dates and Fried Cheese
Ana Sortun sometimes uses halloumi, a slightly sweet cow's milk cheese from Cyprus, instead of Greek Kasseri. Alternatively, you can sprinkle crumbled feta over the pita tarts.
