I made half the recipe in a quarter sheet pan and it works great. This solves both the problem of freezer space and leftovers that are never as good as the original. It took some time but I loved it. The crust is absolutely delicious and the ratatouille is the taste of summer. I subbed in fresh farm market tomatoes (peeled, seeded and chopped) for the canned ones, taking care not to let the filling get too wet.
I would love to try this recipe but my freezer has no room to accommodate a half sheet pan in a flat position, I wonder how many people have an empty spot in their freezer that will hold a pan that large in a flat position so as not to spill any filling. I wonder if the freezer part can be skipped.
Such a good vegetarian recipe! It’s very impressive looking and great for special occasions. It is labor intensive but fun to make. 5/5 would recommend
