This recipe sounded so good. I think it has too much smoked paprika. I was disappointed. Waste of time.
I had high hopes for this recipe. I should have realized that any recipe that used 2 tsps. of smoked paprika might not be well thought out; that taste overwhelms the dish. Getting the cooked eggplant out of the skin is also not an easy task. I regularly make baba ganoosh and getting the cooked eggplant out of the shell is simple when it's crisp. And, it has a deeper flavor. It was a big disappointment.
