This was delicious. The pork was tender and juicy.. I was really surprised with how well the coriander flavor complimented the sweetness of the strawberries. I had a pork loin instead of the tenderloin, so i split it in half to approximate the size of a tenderloin.. The only change I made was using 2 very generous cups of berries and an extra teaspoon of sugar. My only criticism is that I found the cooking times to reduce the sauce took a bit longer than described in the recipe.
We loved this recipe, had it a second time. I think the sauce should be doubled because it was wonderful and had just the perfect amount of sweet tart taste. I did put two (2) teaspoons of sugar than what the recipe called for. It was a very easy recipe to make and turned out perfect.
Disappointed with the strawberry sauce. Ended up mixing in applesauce to get that fruity sweetness. Would not do again.
Very good pork recipe. I served it with roasted purple asparagus, jalapeño & cheddar au gratin potatoes and garnished with fresh strawberries. It was perfect!
