Place carrots in a heatproof container. Combine 1 cup water, vinegar, sugar, and salt in a small saucepan. Bring to a boil; pour over carrots. Let cool to room temperature; cover and chill at least 2 hours.
Super simple recipe and they really taste great on the banh mi (and other sandwiches!)
