Pickled Banh Mi Carrots

  • 8 ounces julienned carrots

  • 1 cup water

  • 1/4 cup white vinegar

  • 1/4 cup sugar

  • 1 tablespoon kosher salt


  1. Place carrots in a heatproof container. Combine 1 cup water, vinegar, sugar, and salt in a small saucepan. Bring to a boil; pour over carrots. Let cool to room temperature; cover and chill at least 2 hours.
