T'afia makes its ratafias by soaking seasonal fruits, vegetables or herbs in wine and a spirit for anywhere from two weeks to a month. This unusual pecan-flavored drink is one of more than 100 ratafias served here, although only a few are on the menu at any given time.

1 cup toasted pecans, chopped
1/4 cup sugar
1/4 vanilla bean, seeds scraped
2 ounces vodka
1 bottle (750 ml) crisp white wine
How to Make It
In an airtight container, combine the pecans, sugar, vanilla bean, vodka and wine and refrigerate for 1 week, stirring occasionally. Strain the drink into ice-filled rocks glasses.
