I made half this recipe for 2 of us and it is fantastic! I didn't completely follow the recipe...I used 16 stalks of thin asparagus which I cut into 1-inch pieces. I had 3.4 ounces of orzo and cooked it first not reading that you are supposed to cook the whole asparagus first than cook the orzo! I browned the butter and cooked the shrimp, removed it and then sauteed the asparagus. For the orzo, I omitted the water and stirred all ingredients together to heat through before adding the parmesan and parsley. SOOO Good!!
Wonderful. Cut in half and substituted haricot verts for asparagus. Did add a few red pepper flakes on the cooking shrimp and a squeeze of lemon at the table. Easy,
This was fantastic. It was a really fast dinner. Took me about 30 minutes with my 2 kids (both toddlers) crawling all over the place. It tasted so good and my kids both ate it and enjoyed it. This is becoming a new staple in our house, because it's fast, easy, and delicious both for adults and kids.
