The measurements for this recipe are out of proportion, in my opinion. I added about half the suggested carrots recommended and it was still overwhelmingly sweet. After cooking, I gave it a good taste test and decided it was not at all on-par with what I wanted. I used chicken broth in place of the water, but ended up adding more after it cooked because I didn't feel it had enough liquid. I also ended up adding more cayenne pepper to make it more to my taste.
If I were to make this again I would cut way, way down on the carrots, increase the liquids, reduce the tumeric in half, and probably reduce the garlic to two cloves. I've been trying to recreate a soup I had this summer on vacation, and I think most of the ingredients were correct, just not proportions. The soup I want is savory and spicy. This soup was really very, very sweet.
What a delightful blend of spices and vegetables! I am definitely adding this to my favorite soups rotation. Thank you for sharing!
