Make the Maple-Bourbon Sauce
  • Heat a saucepan over medium heat. Add the oil, and then stir in the garlic. Cook for 1-2 minutes, or until the garlic is lightly browned.

  • Whisk in the ketchup, maple syrup, bourbon, soy sauce, apple cider vinegar and brown sugar. Reduce heat to low and simmer the sauce for about 3 to 5 minutes or until thickened. Set aside.

Make the Chicken Fajitas
  • Heat a large skillet over medium-high heat. Add the oil and then stir in the chicken. Cook for 2 minutes or until the chicken is lightly browned. Stir in the onion and bell pepper and cook with the chicken for 3 to 5 minutes or until the vegetables are tender.

  • Stir in the maple-bourbon sauce and cook for another 2 minutes or until everything is well combined and heated through. Season with salt and pepper to taste. Serve with tortillas and optional toppings.
