This is an excellent pasta recipe but I did not add the red wine to the egg sauce as it’s not traditional in carbonara and I’d imagine the final dish wouldn’t be very visually appealing. I was hesitant at first, but I did make this using white wine as also suggested and it was surprisingly wonderful! This is a simple well written recipe that’s rich in flavour, and company worthy! It may not be traditional, but it is so delicious! I’ll definitely be making it again and again.
