We really love the flavor of this marinade. We were unsure about the skirt steak from a tenderness standpoint, but it was actually really good. We made a mistake and cut the steak into 1” x 2” strips that were 1/4” thick, then realized our mistake and made the second batch 8” long by 1“ x 1/4“. The smaller pieces were so much better! I think the marinade was able to work into the meat and tenderize it a bit more, or the cooking method tenderized it better than the longer, larger strips. Will definitely make again.
