Maxwell Britten likes to use Pacifique green absinthe in this floral and fruity cocktail. Pacific Distillery started making Pacifique in Washington state with a 19th-century French recipe after the US worm-wood absinthe ban was lifted in 2007.

1 ounce absinthe verte, such as Pacifique
1 ounce chilled Sauvignon Blanc or other dry white wine
In a chilled Pontarlier glass (a traditional absinthe glass) or white wine glass, combine all of the ingredients except ice and the garnish. Fill the glass with cracked ice and stir well; garnish with the twist.
