Richard Betts doesn't love baking. "It's too precise for me," he says. "I don't play well with exact measurements. Plus, I don't want to get in the way of great fall figs."   • Preheat the broiler and position a rack 6 inches from the heat. In a food processor, combine the ricotta with the 2 tablespoons of honey and puree until very smooth.

  • Arrange the figs cut side up on a rimmed baking sheet. Dollop 2 teaspoons of the ricotta puree on each fig and lightly drizzle with honey. Broil for about 2 minutes, until just browned in spots and the ricotta is barely melted; serve warm or at room temperature.
