Glazed Cucumbers

  • 2 medium cucumbers—peeled, halved lengthwise and seeded

  • 1 tablespoon unsalted butter

  • Salt and freshly ground pepper


  1. Slice the cucumbers on the diagonal 1/4 inch thick. Melt the butter in a large skillet. Add the cucumbers, season with salt and pepper and cook over moderately high heat, stirring occasionally, until tender, 5 to 7 minutes.

Make Ahead

The cucumbers can stand at room temperature for 3 hours. Rewarm before serving.
