This was my first time making homemade French onion soup. It took longer for the onions to brown than I expected, but the flavor of the finished dish is wonderful. I made the poblanos but will only add those to my portion, as I don't think my husband would enjoy those. It's really lovely without them, too, if they're not your thing.
Delicious pandemic recipe. Those onions and poblanos took a lot of pampering to get right. I used homemade brown chicken stock and don't think I'd make it without it. Next time I'd use less balsamic and more cheese.
I read this recipe yesterday and made the soup today. It’s rich, earthy and fully satisfying. I also like how incredibly simple it is, with a few ingredients. I added some homemade ciabatta on top as broiled the cheese, and we’re adding this to our favorites file!
