This was delicious! I made it as an appetizer between a late Christmas brunch and dinner and it was devoured. Everyone had seconds and one had thirds.
I did not have time to get 00 flour so sifted bread flour - I suspect the dough would be softer and more delicate with the 00 so will try that next time. I wish had sprinkled some Maldon sea salt or even kosher salt on the top after I brushed the olive oil onto the crust as it needed a touch more salt. I also would have added some freshly ground pepper into the spinach mix to give a bit more kick. Truly fabulous and the crust was super easy to make and rolled out beautifully. Once again, forever grateful to the Italians for their recipes and for generously sharing them.
